The Long Island wine trail is filled with amazing flavors, aromas and surprises. In this new series, we take a deep dive into a specific wine with an expert from a local winery.
Peconic Bay Vineyards opened in 2021 in the former Peconic Bay Winery on Main Road in Cutchogue. Purchased in 2019 by the Soloviev family, the tasting room was revamped with sleek, modern touches and staffed with some familiar wine industry faces, from winemaker Greg Gove to general manager Ken Cereola. Northforker recently spoke with Cereola about PBV's 2022 Gillie's Rosé, perfect for celebrating National Rosé Day on June 10 or, let's be real: sipping all summer long. The wine is named for 14-year-old Gillie Soloviev, an aspiring artist who created the floral label art using watercolors and white acrylic paint.
The style: This dry rose is produced from 100% cabernet sauvignon. A soft and delicate mid-palate leads to a crisp, fresh and lingering finish. Finesse, finesse, finesse.
Flavor profile: Clean and crisp with inviting tropical aromas and notes of white cherries and hints of strawberry on the finish.
Pairs with: I believe this rosé is a wonderful companion to grilled salmon, grilled local vegetables and seasonal salads. Its versatility also makes it enjoyable on our patio with fresh shucked oysters from Hampton Oyster Company.
It also pairs well with salmon and soft cheeses such as brie and goat cheese.
Aging process: A three-hour cold soak extracted just the right amount of pigment from the skins. A slow, cool fermentation brought out the delicate fruit aromas while maintaining a lean, food-friendly summer wine.
Ideal serving temp: This wine should be chilled down and enjoyed at a targeted temperature of 50 degrees — or however cold that cooler at the beach may achieve!
To hold or not to hold: Our rosé is meant to drink now and should be enjoyed during the spring and summer of its release. Gillies Rosé is a favorite amongst our guests and best enjoyed poolside or at the beach.
