Nothing can ruin your enjoyment of a glass of wine more than serving it at the wrong temperature. Too cold and you can't smell or taste much; too warm and it will lose its vitality, altering its texture from light and crisp to dull and flabby. It's a balancing act and personal preference does play a part. If you like wines ice cold or prefer reds at room temperature, you won't find any objections from me. But there are a few things worth noting.
A domestic fridge chills a bottle of wine to about 5C in a few hours. This is ideal for sparkling wines, rosés and aromatic whites such as sauvignon blanc, pinot grigio and riesling, which taste best at 5-10C. Remember that if
